# Choosing a Chinese Tea Set: Gaiwan, Teapot or Gongfu Set

For most people the right Chinese tea set is one porcelain gaiwan: it brews every tea well - green, oolong, pu-erh and costs less than any full set. A clay teapot earns its place when you drink one style daily; a full gongfu set, when the gift must look generous. We pour tea in Phuket daily; this is what we say at the counter.

## Gaiwan, teapot or full gongfu set: what's the difference?

A gaiwan (盖碗, "lidded bowl") is a three-piece brewing vessel: bowl, lid and saucer, usually porcelain, 100–150 ml. The leaf steeps right in it; the lid holds it back when you pour. A teapot does the same with a spout and holds heat longer. A full set adds a fairness pitcher to even out strength, a strainer and small cups - the working gear of [gongfu cha](https://leafspirit.store/knowledge/gongfu-cha.md), the method of many short steeps.

### How to use a gaiwan

Thumb and middle finger on the rim, index on the lid knob; the rim stays cool even when the walls burn. A third of dry leaf, water just below the rim, lid tilted to a narrow slit, decant in one motion after ten to thirty seconds. Two sessions and your hand knows it.

## Porcelain, glass or Yixing clay: matching the material to the tea

Glazed porcelain is neutral: adds nothing, hides nothing - right for delicate teas and anyone still learning their taste. Glass shows the leaf unfurl, lovely with green teas, but sheds heat fastest. Yixing clay (紫砂, zisha) is porous: it drinks in tea oils, seasons over years and belongs to one style for life. One pot for shou pu-erh, another for roasted oolong; soap touches neither.

Clay is a fine fifth purchase, once one tea has become yours and you want the pot to remember it.
