# Goji Berries in Tea: Ningxia Sun-Drying and How to Brew

Goji berries (gouqi, 枸杞) are the small, bright orange-red dried fruits of the wolfberry, grown above all in Ningxia in northwest China. They are soft, chewy and mildly sweet, with a faint herbal tang - as at home in a Chinese kitchen as in a teacup.

## Taste and aroma in tea

In tea, goji lends a gentle natural sweetness and a warm amber tint to the cup. It softens the briskness of green and black teas and rounds out floral blends, adding a little body without any bitterness. The rehydrated berries are pleasant to eat straight from the cup once the tea is finished.

## In the Chinese tradition

Goji has sat in Chinese kitchens and teacups for centuries. The habit is domestic, not ceremonial: a pinch into the office thermos with a few green leaves, topped up with hot water all morning. It gets simmered into soups and congee, steamed with chicken, dropped in beside red dates and chrysanthemum. In the northwest it fills out eight-treasure tea (babao cha, 八宝茶) - rock sugar, jujube, longan and goji in a lidded bowl, drunk across Ningxia and Gansu.

## How to brew

Goji is easygoing: water at 85–95 °C is ideal, and the berries plump up within the first minute or two. A slightly longer steep coaxes out more of their sweetness.

## How it's harvested and prepared

Goji grows above all in Ningxia in northwest China, and it is traditionally sun-dried in Zhongning County - the recognized heart of goji cultivation. The bush flowers and fruits at the same time, so the berries are hand-picked as they ripen, gathered every few days once they turn bright orange-red and the stalk loosens. Machines struggle with a plant that carries flower and fruit together, which is why the picking is still done by hand and the ripe berries are shaken gently into trays to keep them from bruising.

Then comes the drying. In the old Ningxia method the berries are spread thin on raised reed or bamboo racks in an open yard, turned and covered the moment clouds roll in so they never mildew - a few days in high summer heat, closer to a week or ten days in the cooler autumn. Often they are given a quick alkaline dip first to crack the waxy skin and hurry things along. Modern lots go through hot-air tunnels or freeze-drying instead. Either way the berry reaches the cup whole, skin intact and still slightly tacky to the touch, ready to steep beside red dates or a pinch of green tea.

### What makes Ningxia goji different?

Berries dried that way stay whole and chewy, so they swell back up in the cup instead of falling apart.
